Ate Joy’s Beef Tapa

Here’s a recipe contributed to us by our good friend Ate Joy Evangelista. We cooked this earlier for our dinner and it was delicious! You should try it too!

Ingredients:

1 kg of lean beef in thin slices
1 tbsp salt
1/3 cup soy sauce
1 head of garlic crushed and rub to meat
Ground black pepper (depends how spicy u want it)
1/2 cup catsup (optional)
1 cup squezze-c dalandan
1 cup 7up
DIRECTIONS:
Store in the fridge overnight
You can reduce the salt to 1 tsp only if u dint want it to be too salty
Grill in pan with minimal oil do not overcook the beef to keep it tender.
You may use vinegar with chili for condiment (although, i must say, even without the condiment, this tastes super yummy already). And ofcourse, as with all our other recipes with Squeeze-C, my kids, specially my little John, he loved it :D

Dalandan Frosting!

And now, the Dalandan frosting!

Ingredients:

  • 1/3 cup shortening
  • 1/4 cup butter, softened
  • 1 cups confectioners’ sugar
  • 1 tablespoons milk
  • 2 teaspoons Dalandan concentrate
Directions:
In a large bowl, beat shortening and butter until light and fluffy.
Add the confectioners’ sugar, milk and Dalandan
beat until smooth.

Dalandan Muffins

As promised, the dalandan muffins recipe. My kids and my friend’s kids loved it :D

Here are the ingredients:

1/2 cup butter
2/3 cup sugar
2 pcs eggs
2 cup all purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 cup milk
1 cup Squeeze-c Dalandan concentrate
1 tsp olive oil

  1. Mix together dry ingredients in a bowl: flour, baking powder and salt. Set aside.
  2. Mix together milk and calamansi in a bowl, set aside.
  3. Cream butter and sugar for 2-3 minutes.
  4. Add eggs one at a time and mix well.
  5. Add in milk mixture and flour mixture.
  6. Mix until well blended, don’t over mix.
  7. Scoop in non stick muffin pans.
  8. Bake in preheated 350 degrees Fahrenheit oven for 18-23 minutes

Juicy and Saucey Roasted Chicken

Try this tangy and tasteful soupy roasted chicken recipe that my kids loved!

Ingredients:

  • 3 large chicken legs
  • 3 tbsp sugar
  • 2 tbsp Kalla 100% Pure Calamansi Extract
  • 3 tbsp Squeeze-C Calamansi Concentrate
  • 3 cloves crushed garlic
  • 3 tbsp soy sauce
  • salt and pepper to taste
  1.  Pre-heat oven to 350 degrees F (175 degrees C).
  2. Make some shallow cuts accross the skin. Season the chicken with salt and pepper.
  3. Place chicken in a roasting pan, and add in all the ingredients together.
  4. Bake uncovered for about 40 minutes on each side.
  5. Remove from the oven and take out excess oil fron the sauce.

Tempura Sauce with a twist

Give your regular tempura sauce a little twist and zest by adding our Squeeze-C Calamansi Concentrate.

Try it!

TEMPURA SAUCE

  • 2 chicken bouillon cubes (or use 1 cup chicken stock instead of the bullion cubes and hot water)
  • 1 cup hot water
  • 3 tbsp. soy sauce
  • 2 tbsp. sugar
  • 2 tsp. grated fresh ginger
  • 3 tbsp. grated radish
  • 3 tbsp Squeeze-C Calamansi Concentrate
  1. Drop bouillon cubes in water in a small saucepan and boil. (Or heat the chicken stock)
  2. Add soy sauce, sugar, and ginger and Squeeze-C calamansi concentrate
  3. Stir in grated radish.

Calamansi Muffins using Squeeze-C Calamansi Concentrate

For months now (or years), I’ve been meaning to bake a muffin or cupcake with our calamansi concentrate as the main flavoring, so I tried to search the web for a Calamansi muffin recipe, and the most search engine result was that of the Famous Real Coffee Boracay Muffins recipe from Pepper.ph. So with my little chef (Janna), we tried to create the said recipe with minor revisions and using our very own Squeeze-C Calamansi Concentrate.

Here’s my little minnie mouse chef with all her ingredients ready.

Here are the ingredients:

Put together the olive oil, milk and the Squeeze-C Calamansi concentrate and mix well. Set aside.

Add in the flour mixture (flour, baking powder and salt) and Squeeze-C mixture and blend, but do not over mix

Now we are ready to place them in the baking pan, in our case baking silicon cups, and my eager little helper is having a fine time :D

We are ready to bake it in the oven

Bake in the oven at 180 degree celsius for about 18-20 minutes, but in our case, we use convection oven and baked it for 30 minutes.

Use a toothpick to test the center if fully cooked. If it comes off clean, then you are good to go, if not, then add a few more minutes in the oven to allow to fully cook

Sima’s Famous Calamansi Chicken

Ingredients
1/2 kilo chicken breast fillet
1/2 cup cornstarch
8 tbsp water
1/2 cup cooking oil for frying
3 tbsp SQUEEZE-C Calamansi Concentrate
2 tbsp sugar
salt
pepper

Cut chicken in bite size pieces. Cover with flour.
Sprinkle with salt and pepper. Place inside the freezer for 15 minutes.
In a deep pot, brown the chicken in oil.

Remove the chicken and set aside.

For the sauce, mix cornstarch with a little water in a small sauce cntainer. Place sauce pan on the stove on a medium high heat. Pour SQUEEZE-C Calamansi concentrate, water and sugar and mix with spatula.

In a pot, add in the cornstarch mixture and wait until the sauce thickens while stirring occassionally.

Pour sauce over the chicken.

Best served with rice and parsley.
